Adding attributes for size, color, etc.

Hi…I’d like to have option to add drop down or radio button for size and color for each product. How is this done in the Shopping Theme? Also in the demo store, I’ve notice a setting button on the left side that gives option of background color, background texture, etc., but it does not appear on my admin page. Is there somewhere else it’s located?
