You can rename the theme folder and change the theme name in style.css to get rid of update notification. If you have the knowledge to customize template files, I guess you don’t need to worries about theme update.

Omega Options is no longer required. Go to “Appearance > Customize > Posts”, select “Display Post Excerpts” and edit the [read more] text

It’s because of your site title. Try add this to “Appearance > Customize > CSS”

I doubt this is because of the theme. Church theme doesn’t interrupt media library. Try switch to default theme, or clear browser cache.

Omega theme 1.0 allows you to set post thumbnail via “Appearance > Customize > Posts”. It’s waiting for wp theme review team but you can download now at omega theme page.
